Sushi Kawasemi is proudly led by Chef Sam, a master of Edomae-style sushi with over a decade of experience. Trained under renowned chef Taku Ashino at Ashino, Chef Sam has honed his craft in the art of sushi-making, emphasising the delicate Shinkei-jime technique to ensure optimal freshness and flavour in every fish served.

Driven by a passion for seasonal ingredients, Chef Sam is in constant contact with auction bidders across Japan to secure the freshest seafood, flown in four times a week. His expertise lies in perfectly balancing wet-ageing (jukusei) and dry-ageing (ichiyaboshi) methods, tailored to each ingredient’s unique characteristics, elevating the taste and texture in every bite. Every dish showcases his commitment to authenticity and artistry, as he crafts handmade creations that honour traditional practices while inviting innovation.
